Irish potatoes with spinach side


Healthy eating is no longer only a thing of fashion during mealtimes, but a way of life.

Families have incorporated this healthier option of meals for various reasons including health and wellbeing. For those who do love their healthy options, here is a tasty, nutritious and filling dish to try.

INGREDIENTS

2 chicken breasts

4 medium potatoes

3 bunches spinach

2 cloves garlic

1 bulb onions

1 tub butter

Salt to taste

PREPARATION

Marinade chicken with favourite spices and leave in the fridge for 30mins to 1hr (you could also leave over night to enhance the flavours).

Place in the oven to grill for at least 40-45mins. You could also leave to cook to your taste (rare, medium rare and done).

Slice garlic and onions thinly, cook potatoes soft and mash with some salt and butter.

Wash spinach and set aside to drain.

Grease pan with remaining butter and let the onions and garlic simmer till slightly brown.

Do let leave to burn or the garlic will be bitter.

Add salt and throw in the spinach.

Stir and leave to simmer for about 2 mins.

Stir again and it is ready
